My grandpa made us these awesome granola bars and i thought I'd share them with everyone. You might want to tweak with the recipe a little to get them just how you like them. When grandpa makes them, he doesn't put a lot of honey in so they'll be crumbly. When my aunt made them, she put more honey in them so they'd do just the opposite of be crumbly. So it's just whatever you like. Here's the recipe:
8-10 cups dry cereals
Suggestions:
4 c. granola golden toasted (under 10 gr. sugar)
4 c. puffed rice
2 c. whole wheat cereal crushed (under 10 gr. sugar)
1 c. nuts (like almonds, pecans, walnuts, pistachios-but not peanuts)
1/4 c. shredded coconut
1 c. craisins or raisins or other dried fruit
Optional:
1/2 tsp. cinnamon
1/4 c. flax seed
Mix all dry ingredients well.
Add:
1/2 can sweet condensed milk
mix well coating all ingredients.
Add:
1/4 (or more!) c. honey
Mix well. Very important step!
Spray pan (15 1/2 x 10 1/2 x1 1/8 jelly roll pan) with pam.
spread mixture & press down evenly (don't crush) until flat. Use rolling pin to press all ingredients into place. This takes time too & very important. It must be very firm. Keep rolling until all ingredients no longer move around & have fitted into place.
Bake 385 degrees in center of oven for 17 min. It should be golden (toasted) color. Turn off heat but leave pan in oven for another 5 min.
Remove from oven and let cool completely. Turn pan out onto waxed paper. Let cool even more. With sharp straited knife cut down the middle lengthwise. Use a slow sawing motion so as not to crush. Then cut each section into 1-1/4 to 1-1/2" sizes. Wrap individually in plastic food wrap. Store in refrigerator or tightly sealed container.
